i had wandered to broadway, for no real reason, and decided to take myself on a coles supermarket trip. i called home and made plans to cook stir fry and to buy the ingredients needed to top up the veges at home. but all i left with were big mushrooms and cherry tomatoes. the fluro lights of the supermarket had wiped my mind of stir fry and inspired baked mushrooms.

and my love of blending the shit out f everything continues.

mushroom surprise
you need 4 big flat mushrooms (about 10cm in diameter) and 1 sheet of puff pastry.

in the food processor blend:

  • 1 packet tempeh
  • 1 carrot
  • 2 cloves garlic
  • some of the green bit of a leek (or anything else that’s green and lying around)
  • 1 zucchini
  • any other vegetables that you’ve got

until smooth

oil a baking tray.

with a spoon or spatula, fill each mushroom cup with the blended mix – it should round over like a little mountain.

cut the pastry into square quarters and put a square on top of each mushroom, wrapping it over. sprinkle it with poppy seeds and bake in the oven until golden.

served here with tomato pickle and salad
