biscuit frenzy

there’s been a baking obsession in the house of late. i’m particularly proud of the fact we went through 3 (yes three!) tubs of nuttelex in a week – the dairy and wheat-free baked goods have truly benefited from this high supply of vegan margarine.

these are machine pressed biscuits i made on a saturday afternoon and took on the road trip to woollongong. they were delicious – three flavours (plain, honey and cinnamon and chocolate) and in such beautiful shapes. more to come from that machine for sure.

there’s also the vegan sugar cookies in the shape of various creatures of the woods i took to vanessa’s birthday party in the woods that were her house. they were truly amazing and the recipe will come here i hope, maybe once the internet is back on.

and most recently i made a batch of anzac biscuits, a couple of weeks early (and at easter) but such winners they will just keep on getting baked. who needs colonial war celebrations to eat tasty sweet treats?!

the australian women’s weekly anzac biscuits
1 cup rolled oats
3/4 cup coconut
1 cup plain flour (i used wholemeal)
1.5 teaspoons bicarb
2 tablespoons boiling water
1 cup sugar (i used brown)
4 oz butter (i used nuttelex)
1 tablespoon golden syrup

Combine rolled oats, flour, sguar and coconut.
Combine nuttlex and golden syrup in a pan, stir over gentle heat until melted.
Mix soda with boiling water, add to melted butter mixture, stir into dry ingredients.
I rolled these into small balls and put the onto trays – they spread a bit, i got a dozen per tray.
Bake in a slow (150C) oven for 20 minutes or until done.
Slide off the tray and allow to cool.

This made 2 dozen, the recipe said it made 3. Oh well.
