the pumpkin story

at the beginning of may elena came to sydney and we drank some lemonade in a bar. for some reason she also gave me a biodynamic butternut pumpkin, which i happily received and took home to cook.

the pumpkin had been sitting on the kitchen bench for almost a month, and i finally decided it was time to cook it last week, as i planned the meal to cook the night i was planning on staying newcastle.

so i carried this pumpkin all the way to newcastle on the train (with laptop and knitting and papers and books too), it followed me round newcastle as i beavered away on this masters project, and finally made it to keri’s where it became this roasted pumpkin and feta pizza… pumpkin cubed and roasted in oil and thyme from the garden, some whole cloves of garlic were in the pan too and i spread the roasted garlic paste over the base, then put the pumpkin and some fetaa on top, with thinly sliced red onion. baked in the oven at hot hot hot for 20mins or so and it was done. it was good, but the second pizza of the night was even better:

roasted tomato and salami pizza
roast a tub of whole cherry tomoatoes in the oven (no oil even)
finely chop a handful of basil and some garlic, and mix in some olive oil to make a ‘faux pesto’
spread the pesto on a pizza base, squish the roasted tomatoes on top and then cover with shaved salami (i used a spanish chilli salami)
bake in the oven at hot hot until crispy
