christmas lunch

no fancy food, just lots of great salads and a bit of fish and meat. french wine and pacific beer.
carefree lazing on mats and some boating and swimming all afternoon.
my salad was a thai eggplant salad moosewood style:
roast a peeled and cubed eggplant and marinate overnight in fish sauce, sugar, soy, ginger, green chilli and a few other things i’ve forgotten. then add sliced tomato, red capsicum, green onions and bean sprouts in the morning.
i also made an excellent coconut chutney (with freshly scratched coconut!) and a coconut, mango and passionfruit cake. fulap wetem food, and lots of local produce.

you dont cook the eggplant?
its roasted before marinating… this pidgin english is obviously making my proper english pretty bad
