centrepoint is the ‘other’ supermarket in town; it has a good french influence… good cheese, cute biscuits and cheap french lentils.
this is a variation of a recipe from cranks for puy lentils with sunblushed tomatoes and goats cheese.
i’ve turned it into puy lentils with oven roasted tomatoes, rocket and yoghurt (how does a tomato get ‘sunblushed’ anyway?). the lentils are slowcooked with lime, onion, garlic and tabasco, with soy added at the end. and i bought fresh thyme at the markets a few weeks ago (a rare find) and have been drying it. i put a couple of sticks of thyme in too, so tasty and flavoursome.
served cool; nice and cooling on a hot tropical night.
