eggplant salad and sweet potato cakey things

by some stroke of luck (or not) we seem to have 3 huges bags of kumala/sweet potato (purple, yellow, white) in the house at the moment. so the challenge is on to cook them in as many ways as possible.

i mentioned the possibility of a sweet potato hash brown dinner in passing one morning, and by the evening there were no questions, we were having the hash browns. i call them more a pancakey thing.

sweet potato hash browns/pancakes
grate a whole pile of sweet potatoes and an onion (even better, get the food processor to do the hard work for you!)
in another bowl, mix a couple of eggs, flour, soy sauce, sesame oil, tabasco, olive oil and any other flavours you feel like
pour the egg mix into the sweet potato/onion mix and combine well (hands are good for this part)
heat some oil in a fry pan, fry small handfuls of the mixture in flat pancakey things until golden on each side
really good served with sour cream
