the challenge came through by email on monday:

This wed for maths class we are going to Coles to spend $80 imaginary dollars each to ‘buy’ the ingedients for a afncy meal on abudget. Do you reckoing you cold whip up somehting celebrtatory for 4-6 people on 80 bucks? Bacon bone and splut [pea soop perhaps? my lastest favourite cheap meal.

my response today:

i’m thinking a winter dinner (can’t get root vegetabels out of my mind at the moemtn…)

-pumpkin soup with goats cheese to give it a gourmet touch (under $10 for the lot, including the cheese)
-a big loaf of heavy bread ($5)

-lamb cooked somehow. maybe a rack? i don’t cook or eat lamb, but it soudns good. a long roasty thing? ($25?)
-potato rosti thingies (sweet potato and white potato?) (cheap. $5 maybe?)
-a minty chilli vinegary sauce ($5?)
-green salad things if you want ($5)

-chocolate self saucing pudding (from a packet! chepa as, not necessarily tasty… 2 packets, $5?)
-icecream ($5)

total = $65

leaves room for a cheap bottle of wine, or lime cordial and soda (my choice right now)

and tonight i cooked my attempt at the main meal.

odd lamb (can you tell i’m not really a meat cooker?),
steamed beans,
beetroot and sweet potato rosti (potato cakes)

grate a sweet potato, 2 beetroots and an onion into a bowl add 3 eggs, some olive oil and 2 handfuls of plain flour, salt and pepper
mix all together
fry in little pancakes in a hot pan with oil,

and sweet chilli mint sauce

put a few handfuls of mint and coriander in the blender, add enough oil and vinegar and sweet chilli sauce to belnd to a sauce
serve over the meat and rosti
