jap pumpkin
silken tofu
grated ginger
breadcrumbs

steam pumpkin until tender, cool
mash pumpkin and tofu till smooth, grate ginger in, mix through
sprinkle breadcrumbs over an oiled baking tray
drop spoonfuls of the pumpkin mix on the breadcrumbs
sprinkle breadcrumbs over the ‘croquettes’
bake at 180 till golden

served on soba noodles with qp mayo, miso soup from a packet and steamed kale (of course!)
